Ingredients
300ml your favourite unsweetened plant-based milk
1 teaspoon vanilla bean paste
275g plain flour
2 level teaspoons baking powder
1 ripe banana
Greek-style vegan yoghurt, to serve
320g seasonal berries, such as strawberries, raspberries, blackberries
maple syrup, for drizzling
Method
- Pour the milk into a blender, along with the vanilla, flour and baking powder. Peel and break in the banana, then blitz until smooth.
- Preheat your waffle maker. Once hot, ladle in the batter mixture then close the lid, and cook according to the machine instructions, until the waffles are crisp and golden.
- Transfer the waffles to a plate, top with a dollop of vegan yoghurt, some seasonal berries and a drizzle of maple syrup, to taste.
