150g white urid dal
300g basmati rice
2 tablespoons fenugreek seeds
2 red onions
2 peppers
2 potatoes (150g each)
2 sweet potatoes (250g each)
olive oil
5cm piece of ginger
3 tomatoes
4 cloves of garlic
2 fresh red chillies
2 teaspoons cumin seeds
2 teaspoons mustard seeds
1 knob of unsalted butter
½ a bunch of fresh coriander (15g)
For a next-level coconut yoghurt dip, place 65g of desiccated coconut in a small bowl, finely grate over the zest from 1 lime and stir in 6 tablespoons of natural yoghurt. Taste, then tweak with a little lime juice and season to perfection with sea salt and black pepper.
